As determined by Parra & the winemaking team, the single block of Pinot Noir grapes were hand-picked and separated based on must flavour, vineyard ripeness and site topography, as well as many other factors that are taken into consideration.
The picking took place on September 17th 2016 and fermentation over the last few weeks of September and the beginning of October. This Pinot Noir was fermented using 50% whole cluster in two 600 litre vinification barrels before basket pressing and neutral oak aging. Coolshanagh wines always undergo minimal handling and intervention, this wine was treated no differently. Our wine always go to bottling without fining or filtration.
The idea is to create separate parts of wine that uniquely represent themselves in the whole wine. Alone, the parts show the various terroirs of the vineyard but together the entire vineyard and all its nuances are brought into balance. The resulting blend of the two small batches offer a balanced wine awash in silky tannins. This textured pinot is abundant in fresh plum flavours, bright acidity and length and a long persistent, mouth-filling finish. The palate shows great depth of flavour and complexity from its steep and rocky terroir.
